How Yeasts and Molds Can Drive Hidden Oxalate Overload

Oxalate sensitivity is increasingly recognized in environmental medicine, chronic gut dysfunction, and complex chronic illness. Oxalates are naturally occurring compounds found in many plant foods, but they can also be produced inside the body when certain microbes, including specific yeasts and molds, become overgrown. This internal production of oxalates can significantly worsen symptoms for individuals already dealing with inflammation, mitochondrial dysfunction, or mycotoxin exposure. (1)

How Mold and Yeast Can Increase Oxalate Levels

Research shows that Aspergillus species and Candida species can generate oxalate crystals during their metabolic processes. When these organisms colonize the sinuses, lungs, gut, or other tissues, the oxalates they produce can accumulate systemically. This can contribute to the high oxalate levels often seen in patients with mold related illness, mycotoxin exposure, chronic sinusitis, dysbiosis, or weakened detoxification capacity. (2, 3, 4)

  • Urinary urgency or pain

  • Eye pain or gritty sensations

  • Gut irritation, bloating, or irregular bowel movements
  • Skin rashes or granular skin texture

For individuals with mold sensitivity, oxalates can amplify inflammation and contribute to persistent symptoms even after environmental remediation.

High Oxalate Foods to Be Aware Of

Many plant foods contain beneficial nutrients but are naturally high in oxalates. For those with oxalate sensitivity or fungal overgrowth, these foods may worsen symptoms. Common high oxalate foods include spinach, chard, beet greens, almonds, cashews, sesame seeds, peanuts, sweet potatoes, beets, rhubarb, black beans, navy beans, quinoa, dark chocolate, and certain fruits such as raspberries and kiwi. Reducing these foods or rotating them mindfully can help lessen oxalate load while deeper root causes are addressed.

Why Oxalate Awareness Matters in Mold Illness

When oxalate producing microbes are active, a low oxalate diet alone may only reduce symptoms partially. Addressing underlying mold or yeast colonization, improving gut barrier function, and supporting mineral balance are essential components of a holistic plan. Functional testing such as organic acids testing can help identify elevated oxalate metabolites or fungal markers that suggest internal overproduction.

Supporting the body through targeted nutrition, binders, antifungal strategies, probiotics, and mineral repletion can help reduce the oxalate burden and restore more stable energy and immune function.
